BANANA STRAWBERRY BAKED OATMEAL

I love these days when I can just stay home and cook something new. Breakfast is the most important and my favorite meal of the day, I love to have fun with it. I had all the ingredients at home, so I didn't have to go to the store for that. So here you go, the recipe for my banana strawberry baked oatmeal.
 I promise you, it's to die for and the best breakfast I've ever had.

Ingredients


Dry Ingredients
2 cups oatmeal, quick cooking (180 g)
1 cup organic muesli (with no added sugar) ( 90 g )

( I used it for a greater taste but you can add extra oatmeals if you don't have muesli) 

1/2 cup ground oat flour 
( If you don't have the flour then just blend the oats in the coffee grinder like I did)
1 teaspoon baking powder
1 teaspoon cinnamon
2 tablespoons raisins
1 banana, large, sliced
1/2 cup strawberries, fresh or frozen
 (you can use raspberries and blueberries as well - what ever you prefer)
2 pieces of dark chocolate (with sweetener)

Wet Ingredients
2 eggs
1 teaspoon vanilla
1 tablespoon honey 
2 tablespoons coconut oil, melted
1 cup (225 ml) almond milk, unsweetened


Instructions

First, preheat oven to 375ºF (180°C) 

Place oatmeal ( and muesli), oat flour, baking powder, and cinnamon in a large bowl, mix. 
Then, add in all of the wet ingredients, minus the coconut oil and mix. Add melted coconut oil and mix again. Add about blespoons raisins into the mixture.

Spray a baking dish with coconut oil spray. Then, slice a whole banana and cover the bottom of the dish with it. On top of the banana, pour on oat mixture. Then, top with more sliced strawberries ( or what ever you prefer) and chocolate as I did. 

Bake at 180Cº for 40 minutes or until it's baked all the way through and is firm like muffin.
